It might be impossible to be in a bad mood while drinking anything with pineapple juice, coconut rum and lime juice. Inspired by a pineapple cocktail we recently had at a local restaurant, Paul created this recipe that also includes gin, vanilla extract, Lillet and sunshine.
- 2 oz Pineapple Juice (Goya)
- 1 oz Gin (Broker's Gin)
- 1 oz Coconut Rum (Captain Morgan's Parrot Bay)
- 1 drop vanilla extract
- ½ oz lime juice
- ½ oz Lillet
- 2 ice cubes
- Add all ingredients into a cocktail shaker, and shake vigorously for 30 seconds. Pour into 2 cocktail or coup glasses and garnish with lime.
